Directions: Combine the flower, baking powder and salt. In a large bowl, cream the butter and sugar, beat in the egg yolks one at a time. Beat in the vanilla extract. Gradually blend in the dry ingredients. Cover and chill for one hour. Preheat oven to 375 degrees. Lightly grease 2 baking sheets. On a floured surface, roll out the dough to a thickness of 1/4 inch, using a two inch cookie cutter, cut out cookies and place one inch apart onto the prepared baking sheets. with a small brush or using your fingers, draw a thin layer of egg white on top of each cookie. Bake for 10-12 minutes, until lightly coloured. Sprinkle granulated sugar over them while they are hot and transfer to wire racks to cool. Buen Provecho! Tips:
