Rice Mexican Horchata |

Ingredients: 1/2 kilo white rice 50 grms cinnamon 15 pealed and toasted almonds 1/2 fresh dry coconut 1 kilo sugar 1/2 litre of water
Instructions: You soak the rice a day before with water making sure it covers it completely and the cinnamon. Next day add the dry coconut and blend it all very well with the water you used for soaking your rice, if your blender isn´t big enough you can do it in parts, just make sure you blend everything very well. Make a simple syrup with the sugar and the water, boiling both of them until the have thickened, you add this mix to the one you blended before and then you stir. When you are ready to serve the horchata blend it with some ice cubes, this really gives it a fresh touch, and serve it on tall glasses.Buen Provecho!Tips: If you add a lot of ice to the mix and then blend them together you can make a very yummy snow cone!
