Pork in red sauce (Puerco en salsa roja)

Ingredients:
1k pork ribs cut in small squares
3 Spoons lard
Salt to taste
10 Large red tomatoes
1 Small onion cut un half
1 Small green jalapeƱo chile
Cooking oil (as much as you may need)


Instructions:

In a large pot cook the pork well until the meat is tender.
Roast the tomatoes, the onion cut in half and the chile, let them roast until some parts are covered in a black layer. Then blend all of the ingredients together along with the salt.

In a large pot add the lard and set on high heat until the lard is boiling, then add the red salsa you just made and stir. Let it cook until the salsa has reduced it size and you have no excess water, lower the heat.

In a large frying pan place a generous amount of cooking oil, let it boil, then add the pork and fry it until it is golden brown in parts on each side, be careful not to move the pork a lot, otherwise the meat will separate from the bone.
When all the pork is well fried add it to the salsa and let it simmer for about 10 minutes.

Tips:

Serve it acompanied with some refried black beans and white rice, and also if you want to add a more traditional exotic mexican taste, fry some male bananas (platano macho), and serve them on top of the rice.
If you want a more fresh garnish you can make some guacamole, make sure you serve it cool though.
