Mexican Scrambled Eggs with Frijoles

Ingredients:

  • 4 eggs
  • 2 Red tomatoes chopped in tiny pieces
  • 1/2 onion chopped in tiny pieces
  • 1 Green jalapeño chile
  • Cooking oil (as much as you may need)
  • Salt
Instructions:

In a frying pan place three spoons of cooking oil, when the oil is hot almost to boiling point pour in the green jalapeño chile and let it fry for one minute. Add the chopped onion, fry until it is semi-transparent, then add the red tomatoes and mix. Let the tomatoes fry for at least seven minutes, or until they have changed color to a darker tone and are very tender. Add salt.

Take the green chile out and add the four eggs, one by one, you don´t have to beat them before, just make sure you mix them well. When the eggs are cooked place half on one plate and half on the other.

Fried beans:

  • 1 1/2 Cup of boiled beans 1 1/4 Cup of bean water (the water used to boil the beans)
  • 1/2 Onion chopped in tiny pieces.
  • 1/4 Cup of lard
  • Salt
  • Grated cheese

Instructions:

Blend well the boiled beans with the bean water.

Heat in high fire the lard in a saucepan, when the lard is boiling add the chopped onion and let it fry until it is semi-transparent, add salt.

When the onion is well cooked, add the beans and lower the heat and let them cook, stirring consantly until they are well cooked and the color has changed to a darker tone, it has to have the consistency of mashed potatoes.

When your beans are cooked put half on each plate and add the grated cheese on top.
