Huevos Rancheros (Ranch Eggs)

Ingredients:

  • 4 eggs
  • 3 Red tomatoes
  • 1 Onion.
  • 1/2 Green JalepeƱo Chile
  • 4 Tortillas
  • Cooking oil (as much as you need).
  • 1/2 Spoon salt (as much as you need).
  • 2 Slices of ham.
  • 2 Slices of cheese.


Instructions:

Toast the previously washed red tomatoes and chile, add the fourth part of the onion whics adds a little flavour.

When all the pieces are well roasted, this happens when they have black spots on them and are almost tender, place them on the blender; add the salt, let them blend for about one minute, set aside.

Heat two spoons of cooking oil in a small pot, and when it is very hot, pour in the mixture of the blender, let it cook until the sauce changes color and becomes more darker.

Place a saucepan in the fire and add two spoons of oil, when the oil is boiling place the four tortillas, and let them fry until they are a little hard, when they are already cooked, place two on each plate.

Next, on the same pan, add some more oil and cook the eggs, two at a time, after they are pan fried place them on top of the already fried tortillas.

Do the same thing with the ham, one slice on each plate.

Pour a generous amount of sauce on each of the eggs, and then place the slice of cheese on top, let it sit for a moment so the cheese can melt.

Tip: You can also replace the ham with some bacon. Remember to cook the eggs to your taste.
