Crema de Frijol. (Black Bean Cream)

Ingredients:

3 cups cooked black beans. (Frijoles).
2 cups of the water you used to boil the beans.
1 1/2 cups of cream.
1 small onion chopped finely
Cooking oil (as much as you may need).
Salt, to taste.


Instructions:

Place a large pot on high heat and add a generous amount of cooking oil.
While the cooking oil is heating place the three cups of black beans and the two cups of water in a blender and blend until smooth.
When the cooking oil is very hot add the chopped onion and move frequently, let it fry until the onion turns a bit transparent and the sides start to get brown, then add the salt and move frequently so that it doesn't stick to the bottom of the pot.
When the onion is well cooked add what you have on the blender. It's important that you move the mixture frequently otherwise it will stick, let the mixture thicken a bit until it turns a very dark color, and lower the heat.
Lastly add the cream and stir, let it cook for about five minutes and then turn the heat off.
Serve on medium bowls.

Tips:
You can garnish it with some grilled yellow cheese on, or some fresco cheese (almost any cheese of your preference will do)
It also tastes good with some avocados slices on top and a little extra cream. =9
