Basic Red Salsa (Mexican)

Serving size: 2 (aproximately).

Ingredients:
3 Red Tomatoes
1/4 of an onion
Salt
1 Green Jalapeño chile
1 Small fist coriander.

Instructions:
In a comal ( round earthenware griddle for corncakes) place the tomatoes, onion and chile and roast until they are all tender, it doesn´t matter if they get burnt, that is what makes the flavor so characteristic. When they are well roasted place on a blender and mix with the coriander and salt. Try not to blend it a lot, letting it have a little bit of clots. Originally we use a mortar, its more traditional that way, but if you cant get one or dont have one at hand you can use your blender.

Tips:
You can do the same process with green tomatoes, and if you want to you can replace the coriander with parsley.
This is the basic sauce you can use for everything, you can put it on nachos, tacos quesadillas, your eggs, everything!.
